Winter Fruit Salad with Maple-Lime Dressing - healthy, gluten free salad that utilizes seasonal winter fruit. The ingredient list includes red apples, pears, clementine oranges (or mandarin oranges), kiwi fruit, dried cranberries, and pomegranate seeds. 


This salad is packed with anti-oxidants, vitamins - all the good stuff you really need, especially when it's Winter.   Perfect as a holiday dish for Thanksgiving, Christmas, or New Year's Eve. 

Leisure Cranberry Production Salad lidded with new cranberries and a scrumptious vanilla yoghourt whipped cream. A scrumptious, bonnie, festive take activity for the holidays. 


  • 2 kiwis , peeled and sliced
  • 1 cup granulated sugar
  • 1/2 pound seedless green grapes , halved
  • 1/2 pound seedless red grapes , halved
  • 2 apples (I used honeycrisp)
  • 1 Tablespoon lemon juice
  • 1 cup heavy whipping cream
  • 3 Tablespoons powdered sugar
  • 1 cup vanilla Greek yogurt (I like Dannon Light 'n Fit)
  • 12 ounce package fresh cranberries


  1. Rinse cranberries and place in a food processor fitted with a metal blade. Pulse a few times until coarsley chopped. 
  2. Transfer cranberries to a large tupperware. Add sugar and stir to combine. 
  3. Cover container and refrigerate overnight (or at least for 6-8 hours). Pour cranberries in a strainer and allow them to drain for 1 hour (discard leftover liquid).
  4. Add heavy cream to a mixing bowl and beat with electric mixers. Slowly add powdered sugar and continue to mix until very stiff peaks form.
  5. Fold in the vanilla Greek yogurt.
  6. Chop the apples into bite-size pieces and toss them in a little bit of lemon juice.
  7. In a large glass serving bowl or a trifle dish,  layer the red grapes, followed by green grapes, and then apples. 
  8. Layer the chopped cranberries over the top (I like to reserve 1 spoonful for topping on the kiwis at the end. 
  9. Spoon the whipped cream/yogurt mixture on top of the cranberries. Arrange the kiwis on top of the whipped cream. Place remaining spoonful of cranberries in the center.
